A 12-week program for 20 incarcerated men at a time.
The inmates take classes in food safety and handling tools. All chief knifes are tethered to tables. Food prep and clean up before assisting in kitchen before working with chiefs. They are from all areas of Block H of about 400 men and learn teamwork, patience and to cook. These men serve the men, banquets and award ceremonies. Building self-confidence to serve.
This program works closely and supported by Chefs’ Warehouse.
